Breakfast:  1 waffle and scrambled eggs

Lunch:  Leftover cheese pizza and oranges

Dinner:  Black bean burger with cheese, 1/2 cup macaroni and cheese, lots of stir-fry veggies

Someone in my Google+ circles shared a link to a series of photographs featuring Olympic athletes as well as their height/weight.  While the majority of them hold what most people regard as an athletic build, there are several, both men and women, whose build are more like my own.  It really is a refreshing thing to see an artistic study of the athlete to include a larger scope of what health looks like. I know I’m not in the best of health so my credibility may not hold much without a medical degree, but I do disagree with the idea of everyone having to maintain a certain weight/height ratio in order to be considered healthy.  As a child, I played several years of volleyball, basketball, track and field (shot put and discus throw), pushed kids in wheelchairs in a hurry playing baseball; as I got older (and before my back problems) I lifted heavy things/children/dogs.  I have developed some serious muscle over the years, and no healthy, non-surgical weight loss solution is going to get rid of that; I’m fairly confident that once I loose every ounce of fat I still will not meet the ideal weight according to those charts, I will still be considered overweight if not a more severe label.

Now, don’t get me wrong, I understand many of the implications of being heavy.  No other health complications, the additional weight, additional stress on the bones can weaken what holds everything together.  But take doctors, insurance companies, etc., put so much emphasis on one’s BMI, and pair that with the media and social emphasis on that number, and we’re all shocked that so many people have such bad body images of themselves, whether it is as severe as anorexia, bulimia, etc., or if it is a daily sigh of disgust when someone looks at the mirror.  We still wonder why heart disease and the like are so high – because we’re so stuck on achieving that magical number we forget to choose foods with nutrients, take time to exercise in such a way to develop a healthy habit, to take a few moments each day to love yourself and to make sure you surround yourself with emotionally-healthy social situations, as often emotional and physical health go hand-in-hand.

Health should not be about struggling to achieve numbers you may never make.  It should be about working with the body and situations you have, and feeling good about how you are maintaining yourself.

January 23, 2012 (for real this time) – Meatless Monday!

Wow, I really haven’t been with it lately.  Looking back at my posts I seem to have misdated a couple, including yesterday’s.  All the incorrect dates that I’ve noticed have been corrected in their titles, but not in the URL.  Someone should buy me a calendar or something – oh wait, someone DID buy me a calendar for Christmas.  If you are indeed what you eat, then someone’s been growing ginormous peanuts, covering them in chocolate, and feeding them to me without my knowledge because I am a big goober.  🙂

Breakfast:  Cereal and yogurt

Lunch:  Cheese quesadilla with salsa and sour cream (2 tortillas total)

Snack: String cheese, 5 multigrain Club crackers

Dinner:  Grilled cheese sandwiches, veggie soup, and onion rings

Yeah, I know the onion rings aren’t the best choice, but I’m applying a bit of the principle of harm reduction here.  I wanted a side dish different from what I have planned for my other meals, and from yesterday’s adventures I discovered the kids might like onion rings more than just a random bite.  And the last time I checked, having the occasional onion is better than continuously having potatoes (i.e., the fries Jeff wanted for tonight….which he got, but had to encourage the kids to want the onion rings).  To continue in the spirit of harm reduction, I chose to bake them and not fry them.  Bottom line:  I know I have a (slightly) healthier alternative to fries for them.  Still working on Jeff in the that department.

Last night in preparation for tonight’s dinner, I send Jeff out to get “veggies for veggie soup” and some non-tomato vegetarian broth (looking back, considering he doesn’t do tomatoes AT ALL, and there is no hope to changing his mind – I’ve tried – that was kind of silly to make the non-tomato request).  He comes home with:  a can of corn, a parsnip, an orange bell pepper, a yellow bell pepper, a zucchini, and a 12 oz. bag of pre-washed broccoli and carrots, and the believable explanation that our grocer did not have any such broth (given the time of night and the weekend we’ve had I didn’t feel like arguing with him even if I wanted to).

So, this afternoon I washed/drained/chopped all the veggies he brought (except the yellow pepper, as after looking inside it, it didn’t look right to me), threw it all in the crockpot with 8 cups of chicken broth (I know it’s not vegetarian but this is as close as I without a car or cash is going to get with this soup).  Threw in a tablespoon of dried basil and a half tablespoon of black pepper, assumed the broth will give it all the salt this dish should need, and let it cook on high for 4 hours.

And…..it was awful.  I put WAY too much pepper.  No, scratch that.  “WAY too much pepper” covers it about as much as saying Jayne Cobb likes guns to describe his obsession.  I love spicy, but I had trouble eating it.  And poor G., whose soup had been absentmindedly peppered in addition to what was already in there, managed to spill my bowl onto his lap while I was up getting him more to drink (thankfully it was cool enough to not burn) – the second thing he’s spilled today, with the first being half a cup of iced tea next to the computer (everything important is safe).  I might try to drain the veggies in hopes of being able to salvage it for future meals, and the next time I try this, I think I’ll just let everyone salt/pepper to their own taste.

Now, off to my Monday night routine of date night with Jeff.

January 16, 2012 – Meatless Monday

Breakfast: Eggs and English muffin
Lunch: Peanut butter and blueberry jelly sandwich, apple with peanut butter, celery with peanut butter
Snack: Two chocolate chocolate chip cookies
Dinner: Vegetarian nuggets, baked potato, and Parmesan cabbage

In regards to that snack, they are very teeny tiny, barely bigger than a half-dollar, cookies. Little did I know how high that would spike my sugar. On the upside, given how my blood sugar has ran, the fasting (pre-breakfast) sugar isn’t bad considering I had a forgetful moment and forgot to take my nightly medicine.

The vegetarian nuggets (Morningstar brand) were a bit more carb-heavy than I anticipated, but the kids really ate them, as long as they had ketchup. The kids had rotini pasta with marinara since they don’t seem to care of the more adult things (who’s surprised?); next time I will insist I only get half of one, if that much. Appropriately, the Parmesan cabbage recipe, send via email from Rachael Ray’s peeps, was indeed made with Rachael Ray’s lovely blue pots; I totally forgot to buy onion, and since Nicky has shown such interest in eating red cabbage, I thought I’d try it with that. It was good and easy to make (especially when you don’t have an almost-2-year-old trying to squeeze all life from your legs and screaming his love for “Momo”, i.e., Elmo), though the cabbage was nowhere near dry after 10, 14 minutes (I think they meant to say uncover the cabbage after adding the chicken broth). We didn’t eat near enough of this stuff, so I think in order to make this not so wasteful I’ll have to find more creative uses for red cabbage.

January 9, 2012 – Meatless Monday!

Dinner: Veggie lasagna (the tomato-free, Stouffer’s version), salad, and bread

Look at that evening sugar – Whoo! I’m pretty sure, however, I destroyed it in celebration.

The first Meatless Monday in our place was going well, everyone chowing down left and right…..until dinner. Everyone seemed to be a fan of the bread, G. loved the shredded mozzarella in the salad, N. loved the red cabbage in the salad, but no one liked the rest of the meal – except me. There are 5 billion versions of lasagna – my kids will like one, I swear! *insert evil laughter here*
